Is there a way to display my own logo on the jog wheel displays only there is no track cover art?

You can only have a logo or album art.
There is a feature request for a logo shown only when there is no album art. Give it a like and hopefully they will add it as I also want this feature.

I got around this by using iTunes and manually importing my own logo or artwork to each individual track or album that was missing artwork. Depending on the size of your music collection this may work for you - it took me several hours.
